Three recipes I love to have during the colder months
A Perth Winter is still pretty mild compared to those in the rest of the world, but as we’re used to very warm weather for much of the year, it still feels chilly to us!
So just like anyone else living through these colder months, we generally want warm, comforting things to eat and drink and heat us from within.
As I did during Autumn, I’m sharing three Winter dishes that I love from Taste.com.au – and which are always a hit with family and friends.
In keeping with my “buy local” ethos, as usual all recipes contain ingredients which are currently in season in Perth. That means fresh, less time from farm to table, and (hopefully!) reasonably priced.
Here are my favourite Winter dishes this year. Enjoy!
Fragrant Lamb and Barley Ragout
35 minutes of prep, 2 hours of cooking, serves 4.
Slow-cooked lamb. All the veggies. All the taste.
A little bit more advanced than some of my recommended Autumn recipes, but really not too tricky. Give it a go! You won’t be sorry…
Minestrone Soup
25 minutes of cooking, serves 4.
The epitome of warming, Winter comfort food – and SO easy to make! It’s packed with veggies and crammed with flavour. Oh, and it’ll be in your bowl within 25 minutes of starting to cook – which at the end of a long day is certainly a plus….
Tuna Pasta Bake
10 minutes of prep, 25 minutes of cooking, serves 4.
If you cook this as per the recipe, you’ll have zero regrets. It’s simple and delicious!
But this is also a great dish for customisation and putting your own stamp on things. Examples could be using butter instead of spread; using Hilo or full cream milk instead of skim milk; using regular cheddar cheese instead of reduced-fat; opting for tuna in olive oil; and adding extra veggies such as a cup of broccoli florets or diced capsicum. It’s very versatile.
