Wholesome and warming Autumn dishes I’ve been enjoying
Autumn is without doubt one of my favourite times of year.
Perth is still, on the whole, beautifully warm – not hot – during the day, while the night start to bring in a cooling breeze.
The leaves on the trees start to turn.
And we start seeing local, autumnal fruit and vegetables at the shops – such as pumpkin, capsicum and tomatoes.
I wanted to share with you three Autumn recipes that I’m loving at the moment. All contain ingredients which are currently in season in Perth, so they’re fresh and (hopefully) not too highly priced!
What I especially like about these dishes is that they’re quick and easy to make. There is often a misconception that the tastiest dishes take hours to make and contain hundreds of ingredients, which puts people off trying new dishes – but that’s simply not the case.
These are all really straightforward and I’ve included the link to each full recipe on the Taste website.
Enjoy!
Japanese lamb meatballs with miso pumpkin
15 minutes of prep, 30 minutes of cooking, serves 4.
While an incredible miso glaze covers the roasted pumpkin, the meatballs are mixed with ginger, garlic and sesame seeds.
A taste explosion!
Mexican chicken tenders tray bake
15 minutes of prep, 25 minutes of cooking, serves 4.
This dish is essentially fajitas baked in the oven – and with a baking time of just 25 minutes it’s minimum effort for maximum impact!
The chicken marinades in a spice mix with capsicum and onions, and when it’s finished cooking you pop it into tortillas with sour cream, salsa, coriander and lime.
So quick and easy…. and SO delicious!
Ten-minute Thai beef salad
6 minutes of prep, 4 minutes of cooking, serves 4.
This, as the name might suggest, is by far the quickest dish to make of the three I’ve shown you today – which considering the other two are quick is really saying something!
Rub the beef in soy sauce before searing it to your taste, add to cooked noodles and toss in tomato, salad leaves, cucumber and vinaigrette. Sprinkle with mint, peanuts and chilli… that’s it! You’re done!
If you have particular dishes that you love to eat at this time of year, I’d love to hear about them them!
