Welcoming the warmer months with some fresh, flavour-packed dishes
We’ve still got a bit of rain ahead of us, but Spring is officially here and I can certainly feel it creeping through the cold weather!
We’re SO lucky with Perth’s climate, but this winter felt a bit long, didn’t it?!
Before we know it we’ll all be having regular BBQs and whipping up salads once again.
As you guys enjoyed my Autumn and Winter dishes, I wanted to share with you three of my favourite Spring recipes.
All contain ingredients which are currently in season in Perth, so they’re fresh and (hopefully) not too highly priced!
As I’ve mentioned before, it’s often assumed that the tastiest dishes take hours to make and contain hundreds of ingredients, which puts people off trying new dishes – but it’s simply not the case. The prep time for the recipes below is 25 minutes and under.

Honey Sesame Lamb Cutlets
20 minutes to prep, 10 minutes to cook. Serves four.
Lamb is a favourite in our household.
I love how there are so many colours from the vegetables in this dish, making it so appealing to eat.
I would use Extra Virgin Olive oil instead of vegetable oil for its health benefits – but don’t stress about the honey added; a little sugar is absolutely fine! If you find it too sweet, just reduce the quantity of it!
Vegetarian lentil and broccoli tray bake with creamy tahini dressing
20 minutes to prep, 25 minutes to cook. Serves four.
This is packed with veggies and absolutely DELICIOUS!
Tahini is made up of ground sesame seeds, so is a highly nutritious addition to any meal. Adding it as a dressing really makes the veggies sing!
Thai chicken chopped salad with rice noodles
15 minutes to prep, 10 minutes to cook. Serves four.
This is such a fresh and vibrant salad, and would work well for work lunch the next day.
I usually add red capsicum and cabbage to bulk up the vegetable content. It plays a bit more with the texture, too!
Prawn tacos with lime avocado salsa
25 minutes to prep, 5 minutes to cook. Serves four.
Yum! This is one of my favourites.
There is something about the crunchy salad with the soft texture from the tortilla that I just love!
You could easily switch out prawns for another protein if you really wanted to… but I’m personally a big fan of seafood and it goes perfectly with the tang of the salsa.
